Nero d’ Avola , the vine that best expresses the Sicilian territory . The main variety of Sicily, a wine with intense dark red color with great depth and character , coupled with the stigghiole , a speciality of Palermo street food.
Frappato * , a strong red wine grown mainly in the province of Ragusa. Mixed with the Nero d ‘ Avola to realize the Cerasulo of Victory. We combine it with an excellent Sfincione , our delicious typical Palermo Pizza, one of the delicious dishes of our Chef Donna Patricia.
* Nerello Mascalese (alternative to Frappato ) is the second most widely planted variety in Sicily. Often mixed with other red wines to produce the Etna Rosso or Il Faro.
Grecanico ** Another native grape that produces a straw-colored wine with a medium floreal body , is grown mainly in western Sicily and is the main grape used in the Bianco d’ Alcamo , combined with Caponata , one of the most popular products of Sicilian cuisine , a set of vegetables, expertly seasoned with tomato sauce , onion, celery , capers , olives in a special sweet and sour sauce.
Catarratto ** (alternative to Grecanico ) is most ancient and widespread autochthonous grape in Sicily , a full-bodied and straw-colored grape variety used in the blend to produce the Marsala wine .
Grillo *** a wine with a straw yellow color , with floral notes , balanced and elegant, often mixed with Cataratto to produce Marsala , combined with the very classic Bread and Panelle the real ‘’ancestor’’ of ” street food “, an institution in Palermo not to miss .
Inzolia *** (Alternative to Grillo ) A white grape variety which originated in Sicily. It is delicate and very sensitive to climate and was used in the blends of wines to produce the Marsala. In the past it was exported to add body and strenght to many white wines.
